This award winning recipe is special to me because it is the perfect culinary combination of my mother and mother-in-law. Crock Pot Pork and Sauerkraut is one of those recipes you will want to make over and over.

What is easier than throwing the ingredients in the crock pot in the morning and coming home to a delicious ready to serve dinner?

I normally whip up some mashed potatoes (instant is fine, too. No judging here.) and dinner is served. If you are lucky you will end up with leftovers.

Crock Pot Pork and Sauerkraut is one of those recipes that tastes just as good, if not better on the second day.

What do I need to make pork and sauerkraut in the slow cooker?

You will need some simple ingredients to make this recipe at home. Honestly, it’s super easy and you’ll be shocked that you never tried this great recipe before. Crock pot pork and sauerkraut is really great for dinners, we eat it on New Year’s Day each year as well…it’s a weird local tradition for good luck in the new year!

For my version, you’ll need a boneless pork loin, sauerkraut, apples or apple butter, brown sugar, some beer, and an onion. That’s it. Nothing else!

This truly is a really simple recipe. As I mentioned I usually serve with mashed potatoes but you can serve it as is, over noodles, with a salad, or whatever you like! If you don’t like to eat the sauerkraut you can let it give all that flavor to the meat and then use the pork for sandwiches too!

How to make Crock Pot Pork and Sauerkraut:

You are going to love how simple it is to make this recipe. It’s truly magical when you realize that all you need to do is put in the meat, cover it with sauerkraut, pour in the beer, add in the sliced onion and apple on top of the sauerkraut, and shut the lid.

This recipe needs to cook for about 6 hours on high. Cooking times can vary depending on the slow cooker you are using so be sure to check the internal temperature of the pork before cooking and just adjust the time as needed to get it to a safe internal temperature of 145 F.

What kind of Crockpot is best for this recipe?

You may have noticed though that I am a huge fan of the Crockpot. I use mine (all six of them) on a regular basis.

I’ve picked up a few at yard sales or thrift stores, but this Crock Pot is one of my favorites. Everyone needs a crock pot with a lid that clamps on.

No one wants to clean up a crockpot full of food off of their floor mats. I am speaking from real life experience. Baked beans cannot be salvaged once the crockpot spills over on a sharp turn in the car ride!

You can also make a similar version of this recipe in the Instant Pot (Instant Pot Pork and Sauerkraut Recipe) so if you prefer to use the pressure cooker you can definitely do that!

Recipe is calculated using apples, and including the brown sugar. If you really need to make this one less points you could use light beer and cut out the sugar or use a brown sugar replacement.

I prefer the recipe this way because it tastes great! It’s only 4 points per serving so it’s not really worth potentially compromising the taste for me but if you prefer to try it, be sure and let us know how it goes!

FAQs

What is the best cut of pork for pork and sauerkraut? ›

Time: Pork loin is best when it is braised over a long period of time with the sauerkraut, as the tenders in the meat are broken down and the pork loin becomes tender and juicy. I love to use my slow cooker when making pork and sauerkraut to set it and forget it for a hands-off meal.

Is it better to cook pork in a crock pot on high or low? ›

Set the cooker to low; the high setting will boil the meat instead of braise it, so it's only a quicker trip to an undesirable outcome.

Do I need to add liquid to crock pot for pulled pork? ›

Transfer everything to a large slow cooker and add a splash of liquid — water is great, but so is broth, apple juice, or beer if you have them handy. Cover and cook on low until the meat is tender and pulls apart easily. Here's the thing about slow cooker pork: You can't rush it.

Should food be covered with liquid in a slow cooker? ›

Water or liquid is necessary to create steam. When cooking meat or poultry, the water or liquid level should cover the ingredients to ensure effective heat transfer throughout the crock. Some manufacturers of slow cookers recommend adding liquid to fill the stoneware 1/2 to 3/4 full.

Do you Drain sauerkraut before you cook it? ›

It is delicious! My only suggestion is to always rinse sauerkraut using warm water and drain well. I've also made this recipe using white wine and beef broth instead of sherry and chicken stock.

Should you rinse sauerkraut before cooking? ›

It's not necessary to rinse, unless you prefer it that way

Every kind of sauerkraut possesses a tang that borders on sour.

Is 8 hours on low the same as 4 hours on high? ›

The difference between "High" and "Low" on slow cookers seems to differ with every brand and model. One thing that is consistent, though, is that food takes seven to eight hours to reach a simmer point (around 210°) on low; versus three to four hours on high.

Do you have to brown pork before putting in crock pot? ›

Preparing the pork

I prefer to season the meat before adding it to the slow cooker with my favourite spices, along with salt and pepper. I also recommend browning the meat slightly prior to slow cooking which will help maximise the flavour. However, this is a step that can be left out if you don't have enough time.

How do you keep pork from drying out in a crock pot? ›

Yes, it's generally recommended to add some liquid when cooking pork in a slow cooker to prevent it from drying out and to help distribute flavors. You can use broth, wine, barbecue sauce, or even just water depending on the recipe you're following.

What liquid should I cook pork in? ›

Water: A cup of water helps the pork tenderloin stay moist during cooking. Wine: Red wine lends complexity and enhances the flavor. Soy sauce: Soy sauce adds savory flavor.

What juice keeps pulled pork moist? ›

Storing pulled pork

If it is expected to be served within a few hours after smoking, it is better to store it in a crockpot set at the lowest possible temperature. Additionally, spray chicken broth or apple juice on the meat to prevent it from losing more moisture in the crockpot.

Why do you put apple cider vinegar in pulled pork? ›

After you've pulled your pork butt, drizzle over the meat and combine. The vinegar adds contrast to the smoky flavor and cuts through the fat in the meat. It also helps mellow out the darker, gamier-tasting parts of the butt. This makes enough for a 8 pound pork butt/shoulder.

What is the most tender and moist cut of pork? ›

Pork Tenderloin: Pork tenderloin, the muscle that runs down either side of the backbone, is lean, mild, and, yes, tender—in fact, it's the single most tender part of the pig. We like to sear tenderloins and then finish them either in the oven or on the cooler part of the grill.

Is pork butt the same as pork shoulder? ›

Both come from the shoulder of the pig, but pork butt is higher on the foreleg, while pork shoulder is farther down. As relatively tough and fatty cuts, both benefit from long, slow cooking methods such as roasting, stewing, and braising. But the cuts are different enough that we generally prefer pork butt.

What is the most tender and juicy cut of pork? ›

What it is: If you're really into pork chops, pork tenderloin is the cut of meat to know. Cut from the loin, this is the most tender cut of pork. It takes on added flavors from marinades, rubs, and spices with ease.

What type of pork is most tender? ›

Speaking of the loin region, the tenderloin cut also comes from this area. The tenderloin is the most tender meat found on the pig and is exceptionally versatile. Tenderloins are boneless, making them easy to cook whole or break down into pieces. Tenderloins can overcook easily, so ensure you have your thermometer.
