I love greens, all kinds of greens. But collard greens are one of my all time favorites, hands down. I can’t decide if it’s because I’m a huge veggie fanatic or the fact that collards always seem to be stewed in delicious pork fat. Either way, they are fantastic and such a killer keto food. You can eat collard greens on the keto diet without worrying too much about the carb count.

Collard greens deliver an incredibly tasty alternative to other leafy green vegetables including cabbage, lettuce, kale, and spinach. The kicker? Only 1 gram of net carbs per 100 grams! The bulk of the veggie is fiber, so you can quickly fill up on collard greens without the carb count sneaking up on you. Pair it with bacon or another salty cut of pork, and you’ll be in keto comfort food heaven in no time.

Keto Collard Greens with Bacon & Burst Cherry Tomatoes Recipe

This dish is as easy as they come. You can cook all your ingredients in one pan, so clean up is a breeze too. You’ll need collard greens (obviously), bacon, cherry tomatoes, chicken broth, apple cider vinegar, and good ol’ S&P. Fresh or frozen collards are fine. I usually prefer using fresh produce, but I had a few packs of collard greens in my freezer calling my name, and this dish turned out to be the hero of dinnertime all the same. Even my kids went back for seconds, who unfortunately did not inherit my love for vegetables.

Start by cutting the bacon into small strips, about 1cm thick. Throw the bacon in a pan and fry it up until it starts to brown. Toss in the rest of the ingredients and cook over medium heat until the cherry tomatoes explode. F’real. Exploding tomatoes are part of this recipe. The juices from the burst tomatoes will meld together with the other liquids in the pan to form a sauce so tasty you’ll want to drink it. But don’t! Just mix it all to coat your beautiful keto collard greens and enjoy.

Instructions

  • Cut bacon into 1cm strips and fry over medium heat in large pan until meat begins to brown.

  • Add collard greens, cherry tomatoes, chicken broth, and apple cider vinegar. Stir gently over medium heat until cherry tomatoes burst, about 6-8 minutes.

  • Remove from heat and mix ingredients well.

  • Season with salt and pepper, to taste.

    Thanks for the recipe. I'd never cooked collard greens before and couldn't decide on a recipe, so I blended the two that looked best. I ended up using your recipe, substituting balsamic vinegar for the cider vinegar (because that's what I had). I modified by sauteing chopped onion and garlic, and a few red pepper flakes, along with the chopped bacon.
    It was absolutely delicious. I cooked it for about twenty minutes because the greens seemed rather tough, adding the tomatoes (smallish regular size because I didn't have any cherry tomatoes) after ten minutes. The greens still had some bite. My husband said he would have preferred it if I'd cooked it at least twice as long, but he's not going to get his wish in future as I think it was just perfect as it was.

    Your site title is just wrong!! It says "HELPING WOMEN CUSTOMIZE KETO." Well I'm a 71 year old guy who is working on a low carb (sort of keto) diet.
