    Kolhapuri Chicken Curry

    This is one chicken curry which i have been planning to make for a very long time..Couple days back i made it and it was spot on..The flavours were perfect and we enjoyed with rice..I made a wonderful thai red curry baked chicken, it was lipsmackingly good.

    Ingredients for Kolhapuri Chicken Curry

    • Chicken - 1 whole chicken cut into 10 big pieces
    • Oil - 3 tbsp
    • Curry leaves a handful
    • Coriander leaves - 2 handful finely chopped
    • Coriander Powder - 2 tbsp
    • Chilli Powder - 1 tsp
    • Garam Masala Powder - 1 tsp

    For Masala:

    • Oil - 2 tbsp
    • Fennel Seeds / Sombu / Saunf - 2 tsp
    • Cumin Seeds / Jeerakam - 1 tsp
    • Cinnamon / Pattai - 3 cm piece
    • Cardamom / Yelakai - 5
    • Cloves / Krambu - 5
    • Whole Black Pepper - 2 tsp
    • Star Anise - 1
    • Mace - 2
    • Sesame Seeds / Ellu - 2 tbsp
    • Coconut - ½ cup grated
    • Garlic - 6 cloves
    • Onion - 500 grams sliced thinly
    • Tomato - 500 grams chopped
    • Salt to taste

    For Marination:

    • Chilli Powder - 1 tbsp
    • Ginger Garlic Paste - 2 tbsp
    • Garam Masala Powder - 1 tsp
    • Turmeric Powder / Manjal Podi - 1 tsp
    • Lemon Juice - 3 tbsp

    This is one flavourful chicken curry..Taste really fantastic. It has lots of onions in them and whole spices. They are roasted and ground to perfectly. The colour for this dish comes from roasting of the onions so take your time to roast it. Hubby loved it to the core..

    How to Make Kolhapuri Chicken Curry

    1. Start by marinating chicken with the ingredients given for marination well. Leave it to marinate till you get ready with the other stuff.
    2. Heat oil in a kadai. Add in whole spices, garlic, sesame seeds, coconut and roast for a min.
    3. Add in onions, salt and cook till golden. Take this in a blender and add in tomatoes. Make it into a smooth puree.
    4. Heat some more oil in a kadai. Add in curry leaves and the ground masala.
    5. Add in the spices and cook till oil separates.
    6. Add in chicken and toss well. Transfer this to a pressure cooker, add in water and coriander leaves.
    7. Pressure cook for 15 to 20 mins on a low heat.
    8. Turn the heat off and let the steam go all by itself.
    9. Open the cooker and add in another handful of coriander leaves.
    10. Serve.

    Ingredients

    • Chicken - 1 whole chicken cut into 10 big pieces

      Back in Mumbai my neighbor used to make this curry and used to love it, but unfortunately she never shared her recipe. when i moved to US, use to crave for this curry and when u posted it, i was like wow i can try it making myself.
      Finally i have made it today and it is truly delicious. i just cant wait till dinner.
